Fruit Pizza

This is MJ. I have been her English tutor for the past few months, coaching her through American slang and her application process to become an au pair in the United States (never knew this could actually be a non-sketchy venture). After nearly twenty interviews with families all over the U.S., she was accepted by one in none other than…Poway, California!

The world suddenly feels so tiny. I mean, the chances of tutoring a Paraguayan, who then moves to San Diego of all places? Crazy town business.

I had her over for a lunch of cold noodles and peanut sauce, and made this quick fruit pizza as a perfect sunny day dessert to munch poolside. Easiest thing to make ever.

And MJ gave it the classic Paraguayan thumbs up.

Fruit Pizza

1 cup of flour
1/2 cup of powdered sugar
1 stick (113 g) of butter, softened

Mix ingredients in a medium bowl until well-blended. Press into a 12-inch tart pan. Bake at 375 degrees for 15 minutes. Set aside and let cool.

8 oz. (227 g) cream cheese
1/2 cup powdered sugar

Whip cream cheese and sugar. Spread mixture over tart crust.

Top with whatever kind of fruit your heart desires–strawberries, blueberries, mangos, kiwis, nectarines, plums, etc. It’s a versatile dessert. Make it yours! A strawberry glaze can be a tasty final touch as well.
